What are the quickest lunch and dinners that you make? I love cajun chicken grilled on the skillet - its healthy and tasty and I don't feel like I'm on a diet lol:)

chicken in a hurry is another quick one out of the symply too good cook book.

another one I make is just a simple pasta bake....cook the pasta and the mince throw in a tomato based pasta sauce sprinkle with a small amount of cheese and nuke it!!! Serve with veges!!

I made the cajun chicken again - mmm its so tasty, I marinated it in oregano, red pepper, garlic and 1/2 tsp olive oil mixed with water to mix it well. And then sliced tomato, onion, lettuce in between two slices of soylin bread that I toasted, yummo :) Plus half a banana after that :)

I bought the low fat low carb book by Pamela Clark, the australian women's weekly food editor, gosh she has some nice recipes :D
