WICKED CHOCOLATE CAKE
SERVES 10
1 1/4 cups self raising flour
1/4 cup cocoa
1/2 tsp bicarb soda
2 egg whites
3/4 cup castor sugar
4 level tbs low fat margarine (Flora Light)
3/4 cup boiled water
Icing:
3/4 cup icing sugar
1 level tablespoon cocoa
1 - 1 1/2 level tablespoon skim milk
In a medium size mixing bowl completely dissolve sugar and margarine in boiled water. Sift flour, bicarb and cocoa into bowl in one go, using an electric mixer, beat together for 1 minute, add egg whites and beat 30 seconds more. Pour into a ringed metal cake tin, coated with cooking spray. Bake in a fan forced oven 180* (200* normal or gas oven) for 30 minutes.
ICING: Once cake has cooled. place all icing ingredients into a small mixing bowl and combine well. Spread evenly over the top.
this cake can be microwaved as well.....Using a microwave ring dish, coat with cooking spray, cut out grease proof paper to fit base of dish and line base, spray top of paper with cooking spray, coat centre piece of dish with cooking spray. Pour cake mix into dish and place in centre of microwave on HIGH for 6 minutes (650 watt oven). Leave in microwave for 2 minutes then remove, turn out on cake rack, peel off paper and cool.
