Ok, somebody requested this recipe so here it is-

I dont use measurements, so these are approximate, and it usually serves about 6.
2 Large Onions
Taco seasoning to taste (points, OR use cumin, corriander, salt and pepper, garlic salt etc)
2 cloves garlic
1 can chopped tomatoes
1 can kidney beans, drained
500g lean minced beef
3 cups penne pasta, cooked
1 cup low fat ricotta
1/2 cup shredded lite cheese (optional)
Preheat oven to 200 degrees.
Cook penne, drain and set aside.
Cook mince, garlic and onions.
Spray a large baking dish with cooking spray. In a large bowl, mix together cooked mince, drained cooked pasta, tomatoes, drained kidney beans and taco seasoning, combine well, check seasoning (add more if needed).
Pour pasta mixture into the baking dish, dot with the ricotta, then spread ricotta evenly over pasta. Sprinkle with cheese. Bake about 25-30 mins or until cheese has browned and you can smell it!
Very easy, very yummy and it goes a long way too
