Cauliflower, Pumpkin & Coconut Curry Soup

500g Cauliflower, cut into small florets
500g Pumpkin, cubed
1 medium onion
1 litre chicken stock (I used two Massel brand stock cubes in water)
Curry powder to taste (I put in about two heaped teaspoons)
1 can coconut cream (I used light coconut milk)

Fry off the curry powder in the oil. Add onions, pumpkin and cauliflower and sweat them over low heat until softened (I just stired them all around a bit but didn't wait till they got soft!). Don't let the curry burn or the veggies brown. Add stock and simmer until the veggies are soft. Set aside and allow to cool. Add cream and blend the mixture in a food processor.

Per Serve:
Energy = 380kJ
Carbs = 8g
Protein = 3.7g
Fat = 2g
(NB: that's if using lite coconut milk... not the cream)
