Ingredients:
Base:
100g Highland Oatmeal Biscuits, crushed (you can use any biscuits you like, however these are the absolute lowest kJ bikkies you can buy, Weight Watchers/Paradise Lites Vive are close though!)
40g Butter, melted
Filling:
200g Skim Sweetened Condensed Milk
15g Butter
1 tbsp Golden Syrup
Topping:
80g Dark Chocolate, melted (I used Green & Black's Organic Dark Chocolate w/ Orange & Spices, this is low kJ compared to others but it's expensive!)
1. Line a lamington pan with baking paper
2. Mix crushed biscuits with melted butter, press mixture over base of prepared pan. Refrigerate while you're doing the next step.
3. Combine condensed milk, butter & golden syrup in a small heavy-based saucepan. Stir over heat, without boiling, for about 15 minutes or until mixture is thick and "caramely". NB make sure you put it on VERY low heat and you stir it continuously as soon as it's in the pan. I made the mistake of leaving it a few minutes and I burnt it!!!
4. Spread caramel filling on top of biscuit base, refrigerate while you do the next step.
5. Melt chocolate in the microwave, spread over filling.
6. Refrigerate until firm, doesn't take very long at all!
Serves: 12

Keep in mind though that nutritional values may vary if you use different biscuits, butter or chocolate!
