1/2 cup Cabbage finely chopped
1/2 cup Zucchini finely chopped
1/4 cup Green beans chopped (if frozen just snap them, easier than chopping them with a knife)
1/8 cup Onion
1 Tbsp Curry powder
1 Tbsp Peanut Oil
1 egg Scrambled (optional, if you want protein add egg, is yummo! Adds a nice extra texture)
1 handful of Almonds (chopped) or Whole Cashews (optional, but definately reccomended!)
If having egg, cook first. Just whisk it up dont add milk just as is, and make it scrambled. Set aside.
Saute Vegetables in Peanut Oil until brown. Add Curry powder, mix throughly.
Cook until Vegetables are soft. Add scrambled egg and Nuts!
Stir through, cook briefly and serve!
