Here is a cookie recipe, it is low carb or good carb from the GI diet:
Chocolate drop cookies:
1/2 cup cooked white kidney beans
1 tbs wheat bran
1/4 cup plus 2tbs skim milk
1/3 cup nonhydrogenated soft margarine
3/4 whole wheat flour
1/2 cup sugar substitute
1/3 cup unsweeten cocoa
2 tbs vanilla extract
1/2 tsp baking soda
1. Put the white kidney beans, wheat bran, and 2 tbs skim milk into a food processor and pur'ee until well blended. Set a side.
2. Put the margarine, flour, sugar substitute, bean pur'ee, cocoa powder, the remaining skim milk, the egg, vanilla and baking soda in a bowl and beat until combined.
3. Preheat the oven to 375'F. Drop the batter using a tablespoon onto a baking tin lined with baking paper. Bake until it's firm to the touch, about 10 minutes.
Let cool on rack.
Makes about 24 cookies
