120g Chicken Breast finely chopped
50 g Celery finely chopped
50 g Pumpkin finely chopped
40 g RED Capsicum
40 g Onion
50 g Cream
1 tsp Coconut Essence
1 tsp Green Curry Paste
* I tsp curry paste is quite hot, I halved it as I dont like my mouth to be burning lol...so just have half a tsp if your like me~!
Dice Pumpkin and cook slightly in microwave for approx 2 mins.
Pan fry Chicken, Onion, Celery, Capsicum and Pumpkin.
Combine Cream with Curry Paste and Coconut essence.
Pour into pan and simmer for approx 5 mins until sauce is sufficiently reduced.
This recipe would be beautiful on rice if your able to have it, otherwise again lovely on its own!
