Hearty Beef Casserole Recipe??

Does anyone have a "traditional" Beef Casserole recipe that's relatively low in fat??

I can't seem to find one any where

I've got some casserole meat that I need to use up in the next couple of days

i make a yummy stew- not too cluey on the cals though

but i put
diced beef
diced- parsnip
carrot
mixed vegies (frozen)
a couple of spuds
swede
celery
onion
salt pepper bit of garlic

into a pot together and cover with water cook it all up til the vegies are tender and make a paste with gravox and water to thicken the stew.

the hard part is not having a loaf of bread or rolls with it!

I'm going to cook it tomorrow night for tea...I can't imagine it being too high in fat (I'm using Xtra Trim meat) with all those yummy vegies *starts to drool again*

yeah i aint clued up on the gravox cals but you only need a tablespoon or two to thicken it. the parsnip and swede really do add great flavour to the stew

lol i never knew what they were when my mum made it when i was little! the parsnips are like carrots and the swedes are like spuds. i only put one of each in it

I use this beef and rosemary casserole recipe for the family and they love it....

it serves 6

600-700g diced casserole beef
3-4 large carrots,sliced
1 large onion, diced
2 sticks celery, sliced thinly
300g potato (peeled weight) diced
1 cup water
2 tablespoons tomato paste
2-3 teapspoons beef stock powder
2 tsp garlic
1 tsp rosemary
2 tablespoons plain flour

place all vegetables and potato into microwave safe bowl..cover and cook on HIGH for 8 mins. Combine all other ingredients (except meat) and mix together well. Once Veg is cooked place in meat and mix well. Add the stock mix and stir through until well coated. Cover and cook on HIGH for 8 minutes...remove lid and stir well and then cook on MEDIUM heat for 22 minutes.

Serve with rice or pasta or enjoy on its own...

You can add extra veg to it and also leave out spud.

Okay..this is what I cooked last night...

<500 gms of Xtra Trim Beef cubed
1 x Swede
1 x Turnip
1 x Parsnip
1 x Zucchini
1 x Onion
2 x Carrots
1 x Large Celery stick
1/2 Cup Tomato Paste
3 Cups Hot Water
Continental 97% Fat Free Rich Beef Casserole Mix
Supreme Gravox to Thicken

I tossed it all in the Crockpot and let it slow cook for the arvo and then served it with the following:

1 x Scoop Mashed Potato
Broccoli
Cauliflower
Peas + Sweet Corn.

It was soooooooooooooooooooooooooooo yummy

But I was a tad naughty..onced I had trayed up the left overs, I had to get a couple of slices of bread to mop up the gravy

uuuuuummmmaaaaaahhhhhhhhh!!!
