hmmm depends if you want a chicken meal or just chicken? have you thought of homemade kievs? diet coke chicken? vegie topped and grilled? Baked with a yummy sauce? or chicken meals like stirfry, chicken canelloni, chicken stroganoff, chicken burgers? lol Ill give u some more when I know what u want :wink:

hmmm i was being a bit vague me thinks. i ahve heaps of chicken breast in the freezer. i usually just grill it, or crumb it or make pasta bake with it or something. i dont like stir frys (went off them when i was preggers urgh!!)

does anyone have a simple marinade they can think of?

Oooh I love honey and wholegrain mustard just drizzled and smooshed on a chicken breast and then I grill it.

Or how about stuffing it with ham and light cheese and bake in the oven? You can crumb it first - but looks like you're over that :P

Another quick and easy marinade is honey and soy. Yummm.
Just keep moving! And don't be lazy...

hmm have soy but no honey... :(

i have done the ham and cheese thing before and it is divine. might have to do that!! thanks san :)

Make chicken snitzels out of the breast, crumb cook shallow fry in oil & pour taco sause with a bit of cheese wack it in the oven until cheese has melted & eat

oooh taco sauce idea is good!! might have to adapt the shallow frying thing but i brought a jar of taco sauce at shopping on saturday so will definately use it thanks!

chelle that taco sauce chicken was beautiful we had a blackout at the time though so we couldnt see what we were eating but it tasted yum!

Glad you like it Kate. It's the family favourite thing to eat but I don't have it all the time due to the oil but it is so yummy. & it is a quick meal to make too wich is good.

I was making a chicken dish last night & thought of you Kate while I was cooking it with your ckn recipies it another quicky:

dice ckn breast or bbq ckn what ever tickles your fancy. cook it in a fry pan add a can of cambell's ckn & corn soup or cream of ckn soup either one works add some some milk to it I don't measure it just keep adding till you happy with it. simmer it for 15min serve on a bed of rice.
