I made some mushroom soup yesterday. Mushrooms were only $5 a kilo, so I bought heaps!
Here's what I did....
Ingredients:
750g mushrooms, sliced
1 medium onion (about 130g), chopped
1 beef stock cube (the Massel brand beef-style ones are good)
1 teaspoon minced garlic
1 tablespoon (about 10-15mL) olive oil
2 1/2 cups water
4 teaspoons dried parsely
Pinch of chili powder optional
Method:
Fry the onion and garlic in the oil
Add mushroom, stock cube, water (and parsely, chili, or any other seasoning you like) and simmer for about 15 mins
Blend in food processor or use stick blender
Eat!
Makes about 5 serves
