1 can red kidney beans
1 fresh ripe tomato
1 sachet taco seasonng mix
1 red or green capsicum
1 cup grated cheese
1 cup water
1 bag salt reduced/unsalted corn chips
Salad for serving
Blend red kidney beans, chopped fresh tomato and capsicum, and taco seasoning in a blender on a medium setting until smooth (some may like to leave it a little chunky). Add enough water to keep the mixture of a "dip" consistency, this is really up to individual judgement.
Once the mixture is well blended and of the right consistency, transfer it into a saucepan and put over a very low heat, stirring constantly and adding more water if necessary .
When the mix is heated through, serve garnished with cheese and side salad. It looks great served on a platter with a bowl of dip in the middle and the chips and salad scattered around.
