I was so hungry and that was what I had in the fridge so I made like a mushroom sauce with onion sliced mushrooms and then used cornflour to thicken the sauce instead of milk or cream. And just when it finished cooking I added a handful of finely chopped parsley to the lot.
I grilled the chicken on the skillet and then I used the sauce with lots of black pepper and a little parmesan cheese. It turned out quite nice and very yummy
I was pretty sure I saw a similar recipe here a few months back but i couldn't find it so I made it up as I went along

I cracked the 90kg mark for the first time in two years, I'm happy!!
