Broccoli, Zucchini and White Bean Soup

Broccoli, Zucchini and White Bean Soup:

Saute 1 chopped brown onion and 2 cloves in 2 tbs oil until tender. Add 400g chopped zucchini and cook, stirring often, for 5 minutes. Add 5 1/2 cups of chicken stock, cover and bring to the boil. Add 1 x 400g can drained cannellini beans and 300g trimmed broccoli florets. Cover and cook for 5 minutes or until broccoli is tender. Blend until smoth. Stir through another 400g can drained cannelli beans. Heat until hot, season and serve.

SO SIMPLE YET DELICIOUS!!!

I'm sure it's really good, but I made a zucchini soup a little while ago to a newspaper recipe - it was so gross I can't even bear the thought of mushed up soupy zucchini!!
35kg lost. (November 2005 - October 2006)
15kg gained again (as at October 2010).
