Broccoli, Zucchini and White Bean Soup:
Saute 1 chopped brown onion and 2 cloves in 2 tbs oil until tender. Add 400g chopped zucchini and cook, stirring often, for 5 minutes. Add 5 1/2 cups of chicken stock, cover and bring to the boil. Add 1 x 400g can drained cannellini beans and 300g trimmed broccoli florets. Cover and cook for 5 minutes or until broccoli is tender. Blend until smoth. Stir through another 400g can drained cannelli beans. Heat until hot, season and serve.
