2 carrots, peeled, chopped
2 onions, chopped
3 med potatoes. peeled, chopped
1 med sweet potato, peeled, chopped
3 stalks of celery
1 zucchini, chopped
1/2 leek, chopped
2 tomatos, chopped
wedge of pumpkin, peeled, chopped
3 cloves garlic
1 can chopped tomatoes
1 can condensed minestrone soup
6 cups beef stock
3 tbs tomato paste
med can red kidney beans, drained
2 handfuls pasta (i use vegeroni pasta)
salt and pepper
oregano, basil, rosemary, parsley, chives, curry, to taste
Spray bottom of a large heavy based pot. When hot, cook garlic.
Sautee all vegetables until a bit tender (about 7 mins)
Add canned tomatoes, beans, minestrone soup, pasta, herbs, tomato paste. Mix well, turn up to high and boil for about 20 mins on high, stirring often so it doesnt burn to the pot.
Turn down to low simmer for as long as possible, stirring occasionally (I usually simmer it for about 2 hours)
