yeah, I know, sounds errgghhh, but it's really good. And nope, I didn't forget, there is no egg, butter/marg/oil or sugar. I LOOOVVVVEEE this recipe ever so much - I got it out of the newspaper!!
1c wheatbran (unprocessed)
1c wholemeal flour
1c cooked and pureed fruit (apple, peach, apricot etc)
1tsp vanilla essence
Grease and line a loaf tin and preaheat oven to 200*C.
soak wheatbran in milk for 1/2 hour. Add other ingredients and mix in. Place in tin and cook 15 min then reduce heat to 180*C for 40-50 min or until it leaves the side of the tin and a skewer comes out clean.
This is GREAT with butter/marg if you are that way inclined, but is also great and surprisingly moist just on its own.
