Yummy Frittatta!

I got this recipe from last month's Slimming & Health mag and adapted it a bit :)

Ingredients:
300g Sweet Potato, chopped into small pieces
100g Red Capsicum, diced
300g Tomato (2 large), diced
4 Eggs
115g Quark Cottage Cheese (can substitute with Light Ricotta)
10g Parmesan Cheese (I used Kraft 33% Less Fat to lower kJ)

Method:
Preheat oven to moderate heat (350F, 120C)
Boil sweet potato until tender, drain well.
Fry potatoes in a non-stick pan for approx 5 minutes
Add the capsicum and tomatoes and fry for approx 5 minutes
Pour veges into the bottom of a quiche/flan dish
Beat the eggs and Quark together, add some mixed herbs/parsley in if you like
Pour over the veges in the dish
Sprinkle parmesan cheese over the top
Bake for approx 30 minutes

It smells divine, I'll let you know how it tastes tomorrow because I made it for the shared lunch to celebrate the end of my course :D

It's absolutely delicious! I took it to my shared lunch for my course today and even though we ordered 10 pizzas in (for 10 people bahah) and garlic bread AND had cake for dessert, there was still only 1 slice left out of 8. Everyone loved it and want me to bring it to the BBQ we're having soon!

And it was great because it really satisfied me and I didn't want any pizza/garlic bread/cake when everyone else was hoeing into them!

Oh by the way, it normally serves 4 (I cut it into smaller pieces for the lunch) and it's 745kJ per serve :) A simple, low kJ meal!

This sounds so good, I will definitely have to make this.

It will be a good lunch meal to take to uni.
Start weight - 77kgs
Goal weight - 53kgs

Yeah it's great :D and cos it's so low in kJ, you can make the pieces smaller and it makes a good snack. Could even have it for breakfast!

Isn't it just the best?! I made it twice now for a shared lunch and Fathers day dinner and everyone loves it!! It's sooo yum!
Did you manage to find some Quark or did you substitute Ricotta cheese for it?

It is so good, the oldies enjoyed it too :D

I have no idea what quark is so I used low fat ricotta cheese instead. It turned out good :D
