Easy Cornbread

I made this yesterday and it turned out beautiful!! It is so quick to make, and something different :)

Easy Cornbread

Ingredients:
1/2 cup (75g) Wholemeal self raising flour
1/2 cup (75g) Plain self raising flour
1 cup (150g) Polenta
1 tablespoon (20g) CSR Smart Sugar (can also use 2 tbsp sugar)
2 egg whites
1 cup skim milk (I used soy milk)
1/4 cup (75g) unsweetened Applesauce

Method:
Preheat oven to 400F and spray a tin of your choice with cooking spray.

Combine flours, polenta, and CSR Smart in a large bowl.

In a separate bowl, combine egg whites, milk and applesauce.

Stir the wet ingredients into the dry and mix until just moistened.

Pour batter into prepared pan and bake for 15-20 minutes (or until a toothpick inserted near the centre comes out clean)

Serves 12

This recipe is approx 450kJ per serve (1 slice).

For a savoury treat, add some grated low fat cheese, diced jalapenos or corn kernels to the batter before baking. For something a little more sweet, add some blueberries, lemon rind or poppy seeds to the mix! Yummy :D

It sounds yummy, I'm going to try making it.

We have all the ingredients bar the applesauce. Will have to add it to the shopping list.

Tis delish, Bella :D I wasn't sure about it but when I tasted it I was hooked!!! I'm going to try making a savoury version next, chuck some corn and bacon or something in it :D Sundried tomatoes would be nice too!! Yummy!

oh yeah sun dried tomatoes sound so good and black olives...mmmmm with herbs :D

Oooh olives and herbs, good idea! Yummy :D There are so many things you could do with this recipe, it's great :D

Sounds nice. i might haveto give it a go when i do sopping next time. The savoury version sounds like a nice idea to :D
