Tofu "Potato" Salad

I got this idea from the recipes in Michael Murray's "Acid-Alkaline" Diet. I didn't have all the ingredients, but here's what I did. It turned out great

1 head of cauliflower
1-2 tsp onion powder
1-2 tsp minced garlic
1 tsp mustard
30mL lemon juice
4 cups (or more) of very finely chopped veggies (I used carrot, celery, red & green capsicum)
500g block of firm tofu

* Cut cauliflower into small florets and steam for about 5 mins.
* Place steamed cauliflower into food processor with garlic, onion, mustard and lemon juice and process until smooth (this forms the "dressing" of the salad
* Finely chop the veggies (I used the food processor as I'm too lazy to do all that chopping!) and cut the tofu into small cubes
* Pour the cauliflower mixture over the tofu and the veggies and mix well
* Enjoy!!

To give a rough idea (per 100g)
Energy 200kJ
Carbs 2g
Protein 4.5g
Fat 2g

PS: No reason you couldn't use potato instead of tofu... give it a go :wink:
