I invented this one over the weekend, it's really quite nice...
8 large carrots, sliced
1/2 - 3/4 head of cauliflower, cut into florets
6 celery stalks, sliced
1 onion, chopped
3 tsp minced ginger
1 Massel chicken-style stock cube
3 cups water
5-10mL olive oil
Saute the onion, celery and ginger in the oil with a little water. Add other ingredients and simmer for about 15 mins till carrots and cauliflower are cooked. Set aside and allow to cool before blending the mixture in a food processor.
