Ingredients
- 2 wholegrain dinner rolls, halved
- 4 eggs
- 2 medium tomatoes, halved
- 1/2 avocado, sliced
- Freshly cracked black pepper
Method
- Preheat oven to 180 degrees.
- Place halved tomatoes on a baking tray, spray with cooking spray, season with salt and pepper and bake for 20 mins until softened.
- Meanwhile poach eggs to your liking.
- Toast your rolls.
- Slice avocado on top of rolls with tomato and egg.
- Season with cracked pepper.
