Feel free to substitute the ham for bacon (excess fat trimmed off) if you like. Use any chutney you desire to garnish the top of the slices.
Ingredients
- 4 eggs
- 1 cup low fat milk
- 2 Slices thick ham, cut into chunks
- 2 spring onions (Scallions), sliced
- 1 small carrot, grated
- ½ cup flour
- 2 teaspoons seeded mustard
- ½ cup sweet corn, canned, drained
- Salt and Pepper to taste
- Chutney, to garnish
Method
- Preheat oven to 180C degrees (160 degrees fan forced). Grease a flan or baking dish.
- Whisk eggs and milk together until well combined, season with salt and pepper.
- Add ham, spring onions, carrot, corn and stir well to combine.
- Pour flour into egg mix and mix in well.
- Pour into greased pan and cook in preheated oven for 30-40 minutes or until set.
- When cooled, take out and cut into triangles or rectangles.
- Place a spoonful of chutney onto slices and serve.
