Chicken Caprese

This is a lovely Italian inspired dish you are sure to enjoy. Fresh, easy and quick to make, it’s an ideal after work dish to prepare for you and the family.

If you wish to serve ½ cup of pasta per person with this dish then add about 100 calories.

Ingredients

  • 2 chicken breasts
  • 1 can diced tomatoes
  • 1 tbsp. olive oil
  • 1 onion diced
  • 2 cloves garlic
  • 1 punnet cherry tomatoes, halved
  • 1 tbsp. tomato paste
  • 1/2 cup white wine
  • 1/2 cup water
  • 1/2 cup olives
  • Handful fresh basil

Method

  1. In a large non-stick frypan heat olive oil and sauté onion on low heat for 10 mins until softened.
  2. Add garlic then wine and cook for 30 seconds.
  3. Move onions to one side of pan and add chicken breast and cook for 5-8 mins each side depending on the thickness of the chicken.  Add cherry tomatoes, canned tomatoes, tomato paste, water, olives and season with salt and pepper; place lid on turn down heat and simmer for 5 mins.  Add basil leaves that have been torn and continue to simmer until everything is cooked.
  4. Serve with a fresh side salad.
