This salad is surprisingly filling.

The flavours of the ham off the bone, Roma tomatoes, and black and green olives all compliment each other and the potatoes gives the dish substance and texture.

Try this dish as a stand alone meal or as a shared accompaniment.

Recipe Ingredients:

  • 4 large potatoes, peeled and cooked until tender (approx 800g)
  • 1 Roma tomato, deseeded and chopped (approx 80g)
  • 1/4 cup diced ham off the bone (approx 50g)
  • 1/4 cup sliced pitted black olives (approx 50g)
  • 1/4 cup sliced stuffed green olives (approx 50g)

Recipe Method:

  1. Chop potatoes into eighths.
  2. Place potatoes on serving plates and sprinkle tomato, ham and olives over the top.
  3. Serve immediately.
