French Beef Casserole

You will love this slow cooker beef casserole. It has great depth of flavour and is loaded up with vegetables, so is very healthy.

Feel free to add cauliflower or other vegetables of your choice. Make sure you use a good quality wine (one you would love to drink) as this will make all the difference. 

This recipe is low sodium, low sugar, low fat and high protein.

Ingredients

  • 1kg beef, diced, fully trimmed of fat
  • 2 tbsp. olive oil
  • 1 large zucchini, sliced
  • 3 carrots, sliced
  • 3-4 potatoes, sliced skin on
  • 8-10 medium mushrooms, quartered
  • 3 cup good quality red wine, Shiraz or Cab Sav
  • 2 cup beef stock
  • 2 tsp. rosemary
  • 2 tsp. thyme
  • 4-5 cloves garlic
  • 2 onions, sliced
  • 1 red capsicum, chopped
  • Cracked pepper to taste
  • Salt to taste
  • 2 heaped tbsp. cornflour mixed with ½ cup cold water

Method

  1. Turn on your slow cooker.
  2. Place your onion, capsicum into the slow cooker.
  3. Heat a fry pan with olive oil and sear your meat into 2 or 3 batches, place into slow cooker.
  4. Place your wine, stock, garlic, sugar, herbs, season with salt and pepper. Cook on low heat for 4-6 hours.
  5. After this time add the potatoes, mushrooms, zucchini, and continue to cook a further 4-6 hours. In the last hour add cornflour mixed with water, stirring in and cook for a little while longer.
  6. Any leftovers are suitable to freeze.
