As with all Bolognese recipes, this one tastes better the next day.
This is a great weight loss recipe because it's low in fat, sugar and sodium, but is also a great source of protein which keeps us feeling full for longer.

Ingredients
- 500g pork or beef mince
- 2 large onions - diced
- 5 cloves garlic, crushed
- 2 cans diced tomatoes (approx 800g)
- 500 beef stock
- 250g (1 cup) red wine
- 100g tomato paste
- 2 tsp. marjoram
- 2 tsp. oregano
- 1-2 tsp. cracked pepper
- 1 tbsp. brown sugar
- 1 tbsp. olive oil
- 500g spaghetti
Method
- In a large pot heat oil and cook onions on low heat for around 10 - 15 mins until softened. Add crushed garlic and stir for 1 minute. Now add the mince and cook over low-med heat until browned. Break up any large chunks of meat.
- Once mince has browned add the wine, then stock and herbs. Simmer on low heat for around 10 minutes. Add the canned tomatoes and stir. Season with pepper and sugar, then simmer for 30 mins, around the 15 minutes mark add the tomato paste and don’t forget to stir occasionally. (If you have time, this recipe will benefit for longer simmering, 1 or 2 hours).
- Cook pasta as per instructions. Once cooked serve with bolognese. Any left over sauce you don’t use freeze into individual portions for another meal.
- Serve with grated or shaved Parmesan cheese.
