Vegetable Ham & Pasta Soup

This simple yet delicious 320 calories soup is very easy to make. Loaded up with vegetables makes this nutritious and the pasta and ham will fill you up.

Ham hocks are available in most supermarkets especially over the winter time.  Make sure you remove most of the fat before cooking, easy to slice off.  If you can’t find a ham hock just use smoked ham cut into chunks.  Ask at your deli, they will help guide you.

If you don’t want to use pasta you can use quinoa, couscous, or even rice (however this will take longer to cook).  Freeze any leftovers into individual portions for another meal.

Ingredients

  • 1 ham hock
  • 2 zucchini, sliced
  • 3 carrots, sliced
  • 3 celery stalks, sliced
  • 2 cups cauliflower florets
  • 3 potatoes, cut into chunks
  • 6 cups chicken stock
  • 1 tsp. oregano
  • 1 tsp. rosemary or thyme
  • 1 onion, sliced
  • 2 cloves garlic, crushed
  • 2 tsp. Dijon mustard
  • 1 ½ cups macaroni pasta

Method

  1. We used a slow cooker for this recipe. Cut all the fat off the ham hock, as much as you can. Place into your slow cooker with onion and stock. Cook for 4 hours.
  2. After 4 hours take out the ham and slice the meat off the bone and place back into slow cooker. Add all the other ingredients except pasta. Cook a further 2-4 hours, depending on your slow cooker. You can add some extra water if you need to, if you like a more soupy soup. Season with salt and pepper to suit your taste.
  3. When you are happy with the soup add the pasta in, this should only take about 15-20 minutes to cook.
