If you don’t have 4 bean mix then use chickpeas, cannellini beans, or red kidney beans. This should only take you 20 minutes to make. We have not used cheese as the dish doesn’t need it, however you can sprinkle a little over the top if you must have cheese on your nachos. Double the mixture for more people and serve as a pre-dinner nibble.
This recipe is low sugar, low fat and high protein.
Ingredients
- 2 mushrooms, chopped
- 1 cup 4 bean mix, drained and rinsed
- 8 cherry tomatoes, halved
- 2 slices low fat bacon, fat removed
- ¼ onion, diced
- 1 clove garlic, crushed
- ½ cup water
- 2 tsp. fajita seasoning mix
- ¼ cup frozen corn
- 10 corn chips
- 1 tbsp. Greek Yoghurt
- 2 tbsp. salsa
Method
- Heat a non-stick fry pan with olive oil and sauté the bacon, onion and mushrooms until cooked. Add the bean mix, garlic, ¼ cup water, fajita seasoning mix and simmer for 5 minutes.
- Add tomatoes, and if needed the remaining water. Simmer a further couple of minutes.
- Place onto a plate with your corn chips, dollop some Greek yoghurt and salsa and enjoy!
