You can used boneless canned salmon instead of tuna and any leftover fritters can be used the next day in a roll or sandwich with some salad.
Ingredients
- 200g tuna (about 300g can drained)
- ½ cup plain flour
- ½ tsp. baking powder
- Sprinkle paprika
- 1 spring onion, sliced
- ¼ cup milk
- 1 clove garlic, crushed
- 1 tsp. Dijon mustard
- ½ cup corn
- Cooking spray
Method
- In a mixing bowl place all your ingredients and mix until combined.
- Heat a non-stick fry pan that has been sprayed with cooking spray and place scoops of the mixture into pan. Cook a couple of minutes each side.
- Add a dollop of relish or Greek yoghurt and serve with a side salad for a great lunch.
