Four Bean Pasta Salad

This is a great sweet tangy salad which goes really well with grilled meat or fish. You can add some chilli for added bite if you want.

You can also add herbs like coriander, parsley or even a little mint to this dish if you like. 

Ingredients

  • 8 cherry tomatoes
  • ½ cup 4 bean mix, drained and rinsed
  • ½ cup corn
  • ½ avocado, chopped
  • ½ cup dried shell pasta, cooked as per instructions
  • ¼ capsicum, diced
  • Salt & pepper to taste

Dressing

  • 2 tbsp. honey
  • 2 tbsp. lime juice
  • 1 tbsp. olive oil

Method

  1. Place all ingredients except avocado into a large bowl and mix.
  2. Warm honey for 10 seconds in microwave. Add lime juice and olive oil and mix thoroughly. Drizzle dressing over ingredients. Add avocado, season with salt and pepper.
  3. Serve immediately.
