- 8 cherry tomatoes
- ½ cup 4 bean mix, drained and rinsed
- ½ cup corn
- ½ avocado, chopped
- ½ cup dried shell pasta, cooked as per instructions
- ¼ capsicum, diced
- Salt & pepper to taste
- 2 tbsp. honey
- 2 tbsp. lime juice
- 1 tbsp. olive oil
- Place all ingredients except avocado into a large bowl and mix.
- Warm honey for 10 seconds in microwave. Add lime juice and olive oil and mix thoroughly. Drizzle dressing over ingredients. Add avocado, season with salt and pepper.
- Serve immediately.
