French Carrot Salad

Carrot salad makes a great side dish as carrots are generally available all year round. Carrots are low GI, high in vitamin A and K, and rich in anti-oxidants.

If you are watching your sugar levels you can omit the honey and increase the other dressing ingredients, however the honey really compliments the carrots.

Ingredients

  • 4 carrots
  • 2 tsp. dijon mustard
  • 2 tbsp. honey, warmed
  • Handful parsley, chopped
  • 2 tbsp. apple cider vinegar
  • 2 tbsp. olive oil
  • 2 spring onions, sliced
  • 1 stick celery, sliced finely
  • Salt and pepper to taste

Method

  1. Place your carrots into a food processer with the grating attachment otherwise use a normal grater.  Once done place into a large mixing bowl.  Add the parsley, celery and spring onions to the carrots. 
  2. In a small dish place mustard, honey, vinegar, olive oil and mix with a little whisk until all incorporated.
  3. Pour dressing over the carrots, season with salt and pepper and mix thoroughly.
  4. Serve immediately.
