To get the best flavour out of this salad, please use a good quality balsamic vinegar. If you do, you'll only need a drizzle and the flavour will make all the difference.

Ingredients

  • 1 cup chopped lettuce
  • ¼ carrot, cut into sticks or grated
  • ¼ cucumber, sliced
  • 3 button mushrooms, sliced
  • 3 cherry tomatoes, sliced
  • 1 tsp. olive oil
  • 2 tsp. balsamic vinegar
  • Cracked Pepper to taste

Method

  1. Place chopped lettuce in a bowl and all other ingredients on top.
  2. Drizzle touch of olive oil and balsamic vinegar over and season with cracked pepper.
  3. Serve immediately.
