They make the perfect side to any BBQ meat, or any meal for that matter. The taste the BBQ gives these potatoes is well worth the little effort involved.

Ingredients

  • 8 baby chat potatoes
  • 1 tsp. olive oil
  • 2 tbsp. fresh mint
  • Sprinkle of fresh rosemary
  • Sea Salt

Method

  1. Pearce each potato with a skewer twice. 
  2. Place all on a plate and microwave until nearly cooked, approx 10 minutes. Take out and set aside until you are ready to BBQ, this can be done ahead of time.
  3. Place potatoes in a bowl and when ready to grill drizzle some olive oil over, mix with a spoon so all potatoes are coated.
  4. Heat BBQ on med heat and grill potatoes for 5-10 minutes, turning.
  5. Serve in a bowl with freshly chopped mint and rosemary then sea salt.
