Broccolini has a sweet flavor, with notes of both broccoli and asparagus. Broccolini is high in vitamin C and contains vitamin A, calcium, folate, and iron. This side can be served warm or cold depending on the weather.

Ingredients

  • 2 medium potatoes, peeled and cubed
  • 1 bunch broccolini, washed
  • 1 tsp. seeded mustard
  • 2 tbsp. greek yoghurt, light
  • S & P to taste

Method

  1. Peel and cube your potatoes, boil until tender, drain and set aside.
  2. Blanch broccolini in boiling water and refresh in cold water. Drain and set aside.
  3. Mix together seeded mustard and yoghurt in a small bowl until combined.
  4. Place potato, broccolini and on serving plate and drizzle with yoghurt mixture.
  5. Season with cracked black pepper and serve immediately.
