Although these aren't low in fat, the main source of fat comes from the almonds so is healthy monounsaturated fat. Without the almonds this recipe is low in fat coming in at only 2.1g of fat per 100g.
Ingredients
- 1 egg
- 190g self raising flour
- 90g low fat milk
- 50g boysenberries, halved
- 20g almonds, chopped
- 30g sultanas, chopped
Method
- Mix egg, self raising flour together until lightly combined add almonds and sultanas
- Place mixture in muffin tray with muffin cases if desired, the mixture should be ½ filled
- Place boysenberries on top of muffin and place in oven for 10-15 minutes or until browned, serve immediately.
