Pea Soup with Bacon

This quick pea soup will take less than 30 mins to make. We used frozen baby peas which are sweet and easily available but you can use normal peas.

Peas are a very good source of cholesterol-lowering fiber. Peas also provide good to excellent amounts of four important minerals, two B-vitamins, and protein, all with virtually no fat. For something different you could add to the soup some fresh mint as well, or even use minted peas if you like.

This recipe is low fat, low sugar, low sodium, dairy free, gluten free.

Ingredients

  • 3 cups baby peas, frozen
  • 2 cups beef stock, salt reduced, heated
  • 2 cups hot water
  • 2 carrots, sliced
  • 2 large potatoes peeled and cubed
  • 2 bay leaves
  • 1 large onion, chopped
  • 2 cloves garlic crushed
  • 1 tbsp. olive oil
  • 4 slices short cut bacon, all rind and fat removed
  • Sprinkle of thyme
  • S & P to taste

Method

  1. In a large pot heat sauté onion and bacon over med heat for 5-10 mins.  Add the garlic and stir for 1 min. 
  2. Add peas, carrots, potato, bay leaves, then sprinkle a little thyme. Add heated stock and water and bring to the boil. Season with S & P.
  3. Simmer for 20-25 mins until potatoes and carrots have softened.
  4. When ready, blitz with a hand blender or food processor.
  5. Serve immediately.
