Low Fat Potato Salad Recipe

This Potato Salad recipe is not only low in fat, it is also low in sugar and sodium. Despite this, it tastes delicious.

Serve this potato salad at BBQ's and dinner parties, or as an accompaniment to evening meals, including with steak.

Healthy Dessert Recipe :  Low Fat Potato Salad

Recipe Serves:

This Recipe Serves 8.

Recipe Ingredients:

  • 2kg Potato each cut into quarters
  • 6 Spring Onions sliced
  • 2 tablespoon mint chopped
  • 2 tablespoon parsley chopped
  • 4 slices short cut bacon
  • 2 hard boiled eggs

Dressing:

  • 200g Low Fat Natural Yoghurt
  • 200g Low Fat Sour Cream
  • 2 tablespoons Seeded Mustard
  • 1-2 tablespoons lemon juice (to taste)

Recipe Method:

  1. Boil potatoes until just cooked (do not over boil, the potatoes should retain some bite). 
  2. Drain and set aside until cool.
  3. Grill bacon until cooked to your liking.  Set aside until cooled then dice.
  4. In a bowl, mix all the dressing ingredients.
  5. In a large bowl place herbs, bacon, onions.  Place potatoes in bowl and dressing and carefully mix, don’t break up the potatoes.
  6. Place on large plate or bowl and add chopped egg.

Additional Comments:

Add chopped gherkin, as they do in Germany, to give this potato salad some added "tang".
