Egg rolls with Roasted Tomatoes Recipe

These are very easy to prepare so there's no slaving over the stove required. To add extra flavour and added nutrition, serve with wilted spinach and roasted mushrooms.

This is a classic breakfast recipe combo with a twist that we think you'll really like. Remember, eggs are full of protein so they keep you feeling fuller longer. They also contain useful nutrients, which become even more important if you're on a weight loss diet.

Healthy Breakfast Recipe : Egg rolls with roasted tomatoes

Recipe Serves:

This Recipe makes 4 Egg Rolls.

Recipe Ingredients:

  • 2 wholegrain dinner rolls, halved
  • 4 x 59g eggs
  • 2 medium tomatoes, halved
  • Freshly cracked black pepper

Recipe Method:

  1. Preheat oven to 180 degrees (160 fan forced). Grease well 6 hole muffin pan.
  2. Place half rolls into muffin pan and using thumb make a well in the centre.
  3. Crack egg open onto the dinner roll.
  4. Place tomatoes on tray and season with salt and pepper.
  5. Place eggs and tomatoes in preheated oven and cook for 15-17 minutes or until egg has set.
  6. Serve immediately on top of roasted tomato.

Additional Comments:

Eggs and roasted tomatoes, does anything taste better for breakfast!

Add wilted baby spinach or roasted mushrooms in addition to the roasted tomatoes if desired.
