Pikelets filled with Ricotta, Walnut and Honey Recipe

These pikelets look and taste great. Almonds or macadamia nuts can be substituted for the walnuts. If you leave the nuts out of this recipe, it goes from having 4.2g of fat per 100g to 2.7g, making it low fat.

Pikelets make a great weight loss breakfast because they are low in fat but are very filling. They are perfect if served with a range of fruits.

This recipe is low in saturated fats and a good source of protein.

Healthy Recipes - Pikelets filled with Ricotta, Walnut and Honey Recipe

Recipe Serves:

This Recipe makes approx 8 pikelets.

Recipe Ingredients:

  • 59g egg  (1 egg)
  • 200g Self raising flour
  • 3g Splenda sugar
  • 100g low fat milk
  • 50g low fat ricotta cheese
  • 20g honey
  • 10 g crushed walnuts

Recipe Method:

  1. Mix together egg, flour, milk and Splenda and mix well until combined. Set aside.
  2. Mix ricotta and walnuts together  until well combined add honey
  3. Place two tablespoons of pikelet mixture in a non stick frying pan and cook until golden on both sides.
  4. Place ricotta mixture between each layer and serve immediately.

Additional Comments:

Golden syrup could be drizzled over the pikelets instead of the honey if desired.
