Mini Potato and Chive Cakes Recipe

Potato Chive Cakes

Recipe Serves:

This Recipe serves 2.

Recipe Ingredients:

  • 4 small Pontiac potatoes (approx. 375g) peeled and grated
  • 1 egg (59g)
  • 1 tablespoon plain flour
  • 1 tablespoon finely chopped chives
  • Salt and pepper to taste

Recipe Method:

  1. Place grated potato, egg, flour, chives, salt and pepper into bowl.
  2. Mix well to combine and shape into small cakes.
  3. Heat medium non-stick frying pan over medium heat and place cakes in pan.
  4. Cook each side until golden brown (approx. 2 minutes each side).
  5. Serve immediately.

Additional Comments:

Note: Potato cakes need to be prepared and eaten on the same day.
