Strawberry and Orange Pancakes Recipe

Adding fruit to our diet wherever we can is a great idea and these pancakes help do just that.

Strawberries and Oranges are very high in Vitamin C and contain good levels of fibre and other valuable nutrients.

These pancakes are very easy to prepare and look great with the strawberries in them. Enjoy them with a freshly squeezed juice.

Strawberry and Orange Pancakes

Recipe Serves:

This Recipe makes 10 to 12 pancakes.

Recipe Ingredients:

  • 1 cup wholemeal self-raising flour
  • Rind of 1 orange
  • 1/3 cup low fat milk
  • 1 egg
  • 1/3 cup orange juice
  • ½ cup halved strawberries

Recipe Method:

  1. Heat large frying pan over medium - high heat and grease lightly with olive oil spray.
  2. Sift flour into basin, make a well in the centre. In a large jug mix together egg, low fat milk, rind and orange juice until combined.
  3. Mix in with the flour mixture and beat well to make a smooth batter.
  4. Drop ¼ cup of the mixture onto pan, place strawberries on top and cook until bubbles rise to the surface.
  5. Turn the pancake over and cook the other side until light brown.
  6. Serve immediately on there own or with your favorite yogurt.

Additional Comments:

If you have other berries on hand or prefer others, such as Raspberries, Blueberries or Blackberries, these could be placed in the mixture instead.
