Wholemeal Red Plum Muffins Recipe

Dietitians generally recommend diets high in fibre and for those of us with weight loss goals high fibre foods are our best friends because they help us feel full longer.

To help you get more fibre in your diet, we've used wholemeal flour to increase the fibre content in these muffins which are quite dense; but look great when cut open and served with yoghurt. They great for breakfast or a healthy snack.

Wholemeal Red Plum Muffins

Recipe Serves:

This Recipe makes 8 muffins.

Recipe Ingredients:

  • 2 cups wholemeal self raising flour
  • 2 tablespoons soft brown sugar
  • 200ml low fat milk
  • 1 large egg
  • ¼ cup melted butter
  • 1 x 425g can red plums

Recipe Method:

  1. Preheat oven to 180 degrees (160 degrees fan forced). Grease a 12 hole muffin pan with oil spray.
  2. Mix together wholemeal flour and sugar and make a well in the centre.
  3. Mix together milk, egg and melted butter and stir well to combine.
  4. Fold milk mixture into flour until just combined.
  5. Fold through plums and place mixture ¾ full in muffin holes.
  6. Cook for 18 - 20 minutes or until golden brown.

Additional Comments:

Serve warm with your favourite yogurt or eat as a snack on its own!.
