Chocolate and Apricot Muffins Recipe

These muffins taste as good as they look and it won't be difficult for you to find others willing to help you eat them.

This is one of those recipes that appears relatively bad if you just look at the per 100g nutritionals. But what we need to keep in mind is that each muffin on its own isn't really that bad. The lesson then is to limit your intake to a single muffin or two at the most.

Healthy Dessert Recipe :  Chocolate and Apricot Muffins

Recipe Serves:

This Recipe makes 8 to 10 muffins.

Recipe Ingredients:

  • 10g Splenda or Equal Sugar (approx 1/4 cup)
  • 20g olive oil spread
  • 1 egg
  • 150g Self Raising flour
  • 70g vanilla yogurt
  • 20g low fat milk
  • 30g dark chocolate chips
  • 40g apricots, finely diced
  • 10g olive oil spread, melted

Recipe Method:

  1. Preheat oven to 180 degrees (160 degrees fan forced), place sugar and spread in bowl and mix well until creamy.
  2. Mix egg in small bowl and add little bit at a time to the cream mixture, making sure the mixture does not curdle, mixing well after each addition.
  3. Add vanilla yogurt, mix to combine then add milk, flour, choc chips and apricot, stir until just combined.
  4. Grease Friand tin with olive oil spread.
  5. Spoon mixture into each mould until about 3/4 full, place in oven and cook for 15-17 minutes or until risen and golden brown.
  6. Serve immediately.

You can substitute the apricots in this recipe for any dried fruit you like.
