Low Fat Apple & Cinnamon Muffins Recipe

Muffins are one of those things that many think can't possibly be a part of a weight loss diet. Fortunately, this isn't completely true.

These low fat Apple and Cinnamon Muffins have only 2.9g of fat per 100g, but don't taste much different that regular muffins.

These muffins make a wonderful low fat dessert or snack.

This recipe is low fat.

Healthy Dessert Recipe :  Low Fat Apple & Cinnamon Muffins

Recipe Serves:

This Recipe Serves 9.

Recipe Ingredients:

  • 300g Granny Smith Apple (approx 2 apples)
  • 230g Plain Flour
  • 2 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 175g Castor Sugar
  • 2 eggs
  • ¾ cup Low Fat Milk
  • 120g Extra Light Spread melted (we used Devondale)
  • 1 teaspoon vanilla Essence
  • 1 tablespoon water
  • 1 teaspoon ground cinnamon

Recipe Method:

  1.  Peel, Core and Dice the apple.   Place in a saucepan with water and cinnamon and simmer for approx 10 mins until softened.  Take off heat and set aside to cool down.
  2. Preheat oven to 190C and layout 9 muffin patties inside a muffin tin.
  3. In a bowl sift the flour, baking powder, salt, then stir in Equal sugar so evenly combined.  Make a well in the centre.
  4. Now with a mixer, mix in the eggs, milk, melted spread, essence.  Once all combined stir in the apple mixture with a wooden spoon.  Make sure you do not over mix this mixture.
  5. Place mixture into patty pans until full to make 9 muffins.
  6. Bake in oven for 25-30 mins, checking with a skewer.
