Chicken & Mushroom Fettuccini Recipe

Mushrooms are a low calorie food which is low in fat, high in protein, a good source of fibre, vitamin B and potassium.

Combined with chicken and fettuccini pasta in a creamy sauce made with light evaporative milk, this dish is delicious and only 0.1g per 100g over being classified as low fat.

Because it's so tasty and easy to make, it's sure to become a favourite healthy dish in your home.

This recipe is low in saturated fats and a good source of protein.

Healthy Dinner Recipe:  Chicken & Mushroom Fettuccini Recipe

Recipe Serves:

This Recipe Serves 2.

Recipe Ingredients:

  • 200g Fettuccini cooked as per instructions
  • 150g Sliced Mushrooms (your favourite, we used button)
  • 1 Chicken Breast (200g) diced
  • 2 Cloves Garlic Large or 3 small
  • 400g Light Evaporated Milk
  • 1 onion sliced
  • Parsley Chopped
  • 1 teaspoon Olive Oil

Recipe Method:

  1. Cook pasta as per instructions.
  2. Heat pan on medium heat and add onion cooking until softened but not burnt.
  3. Add diced chicken stirring until browned.
  4. Add garlic and mushrooms stirring for a couple of minutes until mushrooms have softened.
  5. Add Evaporated Milk, lots of pepper and a little salt, turn down heat so simmering and reducing liquid, approx 3 minutes.
  6.  Add parsley and pasta stirring to incorporate all the flavours.
  7. Serve immediately, option to add Parmesan Cheese on top.

Additional Comments:

This recipe doesn't include any cheese, however it is even tastier with a pinch of parmensan cheese sprinkled on top.
