Warm Mango Chicken Salad Recipe

Mangoes are delicious and are rich in vitamins, minerals and anti-oxidants. Mangoes are also high in fibre but are low in calories and sodium. Chicken breasts are a wonderful source of protein and with the skin off are low in fat.

Salads provide a range of nutrients and if they provide any fat at all (like that contained in avocados) it is usually very good for us.

This recipe is low in Saturated Fat and a good source of Protein.

Healthy Dinner Recipe : Warm Mango Chicken Recipe

This Recipe Serves 1 or 4.

Recipe Ingredients:

Ingredients for 4


  • 4 small chicken breasts, skin off
  • 200g salad mix (mix of salad leaves)
  • 1 mango, sliced into wedges
  • 1 large avocado, sliced thinly
  • 1 cucumber, sliced thinly lengthways
  • 1 cup cherry tomatoes, halved
  • 1 spring onion, finely sliced
  • 1/2 cup mango chutney
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon hot water
  • Salt and pepper to taste

  • 1 small chicken breast, skin off
  • 60g salad mix (mix of salad leaves)
  • 1/2 small mango, sliced into wedges
  • 1/2 small avocado, sliced thinly
  • 1/4 cucumber, sliced thinly lengthways
  • 1/4 cup cherry tomatoes, halved
  • 2 tablespoons finely sliced spring onion
  • 2 tablespoons mango chutney
  • 1 tablespoons balsamic vinegar
  • 2 teaspoons hot water
  • Salt and pepper to taste

Recipe Method:

  1. Grill chicken breast on a preheated hot char grill or in a frying pan for 4-5 minutes each side.
  2. Wrap in foil and set aside.
  3. Combine the salad mix, mango, avocado, cucumber, cherry tomatoes, and spring onion and toss lightly to combine.
  4. Slice the chicken into thin slices and place on the salad.
  5. To serve, combine the mango chutney, balsamic vinegar and water and pour over the salad.
