Chunky Beef and Potato Curry Recipe

Chunky Beef and Potato Curry Recipe

Recipe Serves:

This Recipe Serves 4.

Recipe Ingredients:

1 tbls Canola oil (18g)
1 Onion large, finely chopped (120g)
2 Garlic cloves, finely crushed (6g)
1 tbls Fresh ginger, grated (6g)
2 tbls Mild curry powder (30g)
600g Beef lean, cubed
420g Chopped tomatoes can
1 cup Beef stock, reduced salt (250ml)*
1 cup Coconut milk, light (250ml)
500g potatoes, boiled, drained & halved
2 tbls Fresh parsley, chopped (5g)

Recipe Method:

1. Heat oil in a large frying pan. Add onion and cook over medium heat until softened. Add garlic and ginger. Cook for 2-3 minutes. Stir in curry powder and cook for 1 minute.

2. Add beef. Cook, stirring over a high heat, until meat is well coated with spice mixture and browned all over.

3. Add tomatoes and stock. Cover and simmer for 1-1¼ hours, or until meat is tender.

4. Add coconut milk and potatoes. Cook for 5 minutes.
5. Serve sprinkled with parsley and with warmed naan or pita bread.
