Mini Quiches With Capsicum Recipe

Portion control is one of the secrets to successful weight loss and eating mini versions of your favourite healthy foods is a great way of getting used to eating smaller portions. These mini quiches with capsicum are high in protein and contain healthy antioxidants that are provided by the capsicum.

When combined with a healthy cucumber salad they make a perfect dinner for up to four people.

Healthy Dinner Recipe : Mini Quiches With Capsicum Recipe

Recipe Serves:

This Recipe Serves 4.

Recipe Ingredients:

  • 5 eggs
  • ½ cup low fat milk
  • Salt and pepper to taste
  • ¼ green capsicum, finely diced
  • ¼ red capsicum finely diced
  • Green salad to serve

Recipe Method:

  1. Preheat oven to 180 degrees or 160 degrees (fan forced).
  2. Grease two 12 hole patty tins with oil spray.
  3. Mix together eggs, milk, salt and pepper until well combined. Add the capsicum and mix in well with the egg. Pour mixture into the patty tins, place in oven and cook for 10-12 minutes or until egg is set.
  4. Serve immediately with green salad and crusty bread of your choice.
