Penne Pasta with Sweet Potato Recipe

Pasta is not fattening! But it is yummy and even healthier when combined with sweet potato, semi sun-dried tomatoes and ham as it has been here.

This recipe is quite an easy one to prepare.

Any sort of pasta you prefer can be used including pasta spirals or bowties.

This is a Low Fat recipe.

Healthy Dinner Recipes : Penne Pasta with Sweet Potato

Recipe Serves:

This Recipe Serves 4.

Recipe Ingredients:

  • 500g penne pasta
  • 1 small sweet potato, peeled and cut into cubes (approx 200g)
  • 1 tablepoon olive oil (13g)
  • 4 slices shoulder ham, chopped (approximately 75g)
  • 200g semi sun-dried tomatoes
  • 1/2 cup sliced spring onions (100g)

Recipe Method:

  1. Preheat oven to 180 degrees (160 degrees fan forced).
  2. Place sweet potato on tray, drizzle olive oil over the top and bake for 20 minutes or until golden brown.
  3. Cook pasta in large pan of boiling water, uncovered, until just tender; drain. Sauté ham in small frying pan until golden brown, set aside.
  4. Toss sweet potato, sun dried tomatoes, ham and spring onion through pasta and serve immediately.

You don't have to be Italian to prepare or appreciate great home made pasta!

Our nutritional panel is based on sun dried tomotoes not packed in oil. Even if drained, this will add to the level of fat in the recipe.
