Sweet Potato Shepherd's Pie Recipe

This is a simple twist on the Shepherd’s pie, using sweet potato instead of normal potato, which gives the dish more flavour without the need to add extra calories with ingredients like butter and cream. In addition we've added broccoli which adds texture and goodness.

If you don’t have four ramekins, simply put all ingredients in a large oven proof casserole dish and it can be served that way.

Sweet potato shepherd's pie Recipe

Recipe Serves:

This Recipe Serves 4.

Recipe Ingredients:

  • 200g lamb mince (reduced fat)
  • 60g onion, finely diced
  • 10g garlic
  • 100g broccoli, cut into florets
  • 400g can of chopped tomatoes
  • 200g sweet potato, peeled and cut into cubes
  • Fresh parsley, chopped to serve

Recipe Method:

  1. Preheat non stick pan over medium heat.
  2. Add onion and cook until translucent, add garlic and cook further one minute.
  3. Add lamb mince to pan and stir in with onion until well combined.
  4. Cook lamb mince until well browned, add broccoli and chopped tomatoes and stir well to combine. Set aside.
  5. Place sweet potatoes in small sauce pan and cover with water
  6. Cook until sweet potato is tender and drain.
  7. Mash sweet potato well using fork.
  8. Lightly grease four oval oven proof ramekins and evenly place lamb mince in each until ¾ full.
  9. Place sweet potato over the top and cook in oven at 180 degrees or 160 degrees (fan forced) for 10 minutes or until bubbling.
  10. Serve immediately with salad or cooked green vegetables if desired.

Additional Comments:

To turn this dish into a Cottage Pie, simply replace the lamb mince with beef mince.
